We had a most satisfying lunch today. Freshly made ricotta, burrata, mozzarella, (aged) caciocavallo cheese incorporated into various antipasti using minimal seasoning, but oh, what wonderful flavours and texture!! We were lucky to be able to watch how the cheese was made too. We'll be back again soon.
